the main thing is to get rid of the water content in the meat so it doesnt get spoilt.
it could be that due to the high moisture content in the air in goa, it is essential. in rajasthan, we just put it out in shade (covered).
can be done with chicken goat, deer, most other meats.
Lasts for months too.
