Add on recipe....you can use the same gravy as prepared for the butter chicken to make restaurant style Daal Makhni.

Just cook some Black Urad mixed with some Rajma (Red Kidney Beans) and Channa Daal like you would normally do..withou any salt or seasonings. After the daal is cooked, put it on simmer for about 5-10 mins. using a wooden ladle to crush some of the daal to give it a thicker texture. Add the tomato gravy, oodles of butter, some Milk and seasoning, and finally some cream and voila! you have great restaurant style Daal Makhni!

Navi, here's a bachelor, greasy spoon, baked fish for the microwave:
wash and dry a kilo or two (or ten of fish, if you have such a big microwave)
mix salt, chilly powder and turmeric -about a heaped table spoon of each (for 700g of fish), mix well and with a wee bit of turmeric paste and vinegar, make a paste of the 3 powders, smear it evenly over the fish fillets.
let it marinade for 15 -20 min
In a microwave dish, take 50ml olive oil, add 2 tablespoons garlic paste, microwave till garlic is cooked to a brown mess...dont forget to cover the dish while cookin or the innards of the oven will be splattered! :evil:
now add the fish fillets artistically, 8) ensure they are coated well with the garlic /olive oil combo.
cook for 5-7 min at about 800W.Stop in between and turn the fillets to ensure even coverage in oil/masala
Stop earlier if you feel its done-test with a fork-fish is flaky? ready to eat, just pull it out and devour

BB, great going so far,keep on doing it, but seriuosly, do you guys get salt petre separately, as mentioned in the pickle recipe? I'd love to make me some lamb pickle...

Wouldn't your local artesh baz be a source for salpetre? Or an old-fashioned pharmacy, perhaps? I could tell were to go look for it occurring naturally, but you might not to use that for pickling meat. Cheers

hi eljefe you can find salt petre at any masala stores it is also known locally as (Papad khar) if you still do not get it pm me your add and i will counter it for you at no charge.


If any one has any specific recipie pls mention.I will try to get it .

Another foodie, eh? Good show Baracho. Naga, boil a dog and ammunition (DMS) boots for 3 hrs, throw away the dog and eat the boots! :P

have u ever tried achaar without saltpetre? give it a go.
turns out well.

the main thing is to get rid of the water content in the meat so it doesnt get spoilt.

it could be that due to the high moisture content in the air in goa, it is essential. in rajasthan, we just put it out in shade (covered).
can be done with chicken goat, most other meats.
Lasts for months too.

Here is a dish I think you guys would love, my wife calls it her "Cajun Boil"

It is all boiled in a large pot slowly, with cayenne pepper, cumin, coriander, and a few others. It is quite spicy! The little dishes have melted butter in them for the artichokes and potatoes.

I'll also bake the bread.

I have been planning on visiting India next July, as there is going to be a total eclipse and I would dearly love to bring my family to experience it and I would love to meet everyone at an IFG get-together somewhere! Unfortunately, as some of you know since my father passed away 2 years ago I have been taking care of my mother, who has many issues that prevent travel. So at this point all I can do is offer my hospitality here should anyone be travelling through my neck of the woods.
