I have a caveat here. Even if you patina the blade with mustard and vinegar, it is still possible for the blade to rust. Could you please explain the process? My Mercator blade got darkened after it was cleaned with a kitchen duster (which was slightly humid). I put Ballistol on the blade immediately but the dark stain stayed back.

A couple of my blades (been with me for over 30yrs!!!) both made out of Lorry Leaf Spring (images can be seen in my earlier post 'Briha's Blades') have gathered some spots
Tried '0' emery - still they exist - need advice.

Having said that, if you wish to remove stains on a knife, one way, is to use any flouride based toothpaste and a wine cork. Just add the toothpaste to the cork and gently rub on the stain on the blade in gentle circular motions. Wash off. The stains should come off.
For creating a mustard and vinegar patina, Moin has written a very interesting thread on it here . You can use anything acidic like lemon juice etc.
