This video by National Geographic captures the essence of Samurai sword making. I don't know if there is a better documentary on this subject. Most educational.

There are a few documentaries and short films about Japanese swords on Youtube .... of varying quality and accuracy - avoid the American ones because they tend to be total sh*te.
Some of the inscriptions can be quite gruesome on the old swords - eg, `First test on one body`. `Second test on two bodies`.
