dont lose heart, there are very good knives available in TN.
There is a company called kishco which make good cutlery. Their products are available from any good kitchenware shops.
Glare do make kitchen knives and they are good value knives. Kitchen knives come in a variety of shapes and sizes. The shape of a knife makes it suited to a particular job and a wide range is available. You may want to use purpose-made knives or keep to a few that will cope with many tasks. Buy a cleaver, a chopping knife, a bread knife, a fillet knife, a carving knife and a bread knife.
Its best you go for some foreign makes. Japanese make good kitchen knives but expensive. if that is beyond your budget, get knives made by grinding leaf springs from a car or a van. it is very good quality steel and can hold its edge. But the local black smith might not be able to make it into many shapes. You can get a cleaver and an all-purpose knife made this way.
Main thing to remember is to get a good knife sharpner and to sharpen and steel your knives regularly. You will be able to get great performance out of them.
