Hi guys! I am a great lover guns,fishing and love to eat and taste exotic foods so it came to my mind to start a topic of recipies on exotic foods from different states so all members please try to pitch in some of your home town delicacies could be veg or non veg. As most of youl know i come from the land of sun and sand Goa. So here are some mouth watering recipies to follow-

Goa Fish Curry
Ingredients-
700gms Promfret or fish of your choice
½ cup oil
1/3cup onions sliced fine
¼ cup tomato chopped
½ cup thick coconut milk
½ cup thin coconut milk
4 green chillies slit and deseeded
Salt to taste

Paste-

1 ½ tsp coriander seeds
1 ½ cup cumin seeds
1 ½ tsp garlic chopped
1 tsp turmeric powder
3 tbsp tamrind pulp

Method –
Clean and wash the fish, cut into slices, rub with salt and set aside
Put ginger, garlic, tamrind, coriander, cumin, chillies and turmeric into blender add ½ cup water and make a fine paste
Heat oil in a heavy pan and sauté until golden brown , add tomato into paste stirring continuously for 2 min. Add thin coconut milk and 1 ½ cup water and bring to boil then add fish and green chillies, simmer for 5 min adjust sessonoing to tsste(salt). Now add the thick coconut milk and bring to boil serve hot with boiled rice.

Crab cakes
Ingredients
400gms crab meat(fresh or tinned)
2 egg yolks
½ tsp salt
½ tsp pepper
½ tsp mustard pdr
½ tsp chillie pdr
2 tbsp tomato chillie sauce
1 tsp mayonnaise
1 tsp coriander chopped fine
1 tsp melted butter
Bread crumbs for coating
Oil for deep frying
Listed. Method
Lightly mix crab meat and all ingredients except bread crumbs in order When well blended shape into small cakes. Roll each cake in bread crumbs until evenly coated on all sides.
Heat oil, fry cakes until golden brown drain on absorbent paper towels serve hot garnished with lemon and a sauce of your liking

Prawn Balchao



Ingredients

1 kg small- to medium-sized prawns, cleaned and deveined
5 tbsp vegetable/canola/sunflower oil
2 large onions, finely chopped
3 large tomatoes, finely chopped
2 tbsp garlic paste
1 tbsp ginger paste
10-12 dry red chilies
1 tbsp cumin seeds
1 tsp mustard seeds
2 inch stick of cinnamon
8-10 cloves
2 tbsp sugar
½ cup vinegar
Salt to taste

Preparation

Put the prawns in a large bowl and sprinkle some salt over them. Keep aside.
Roast the dry red chilies, cumin seeds, mustard seeds, cloves, and cinnamon till they begin to release their aroma. Take off from the fire and set aside to cool.
Grind the ginger, garlic, and roasted spices into a smooth paste using the vinegar.
Heat the oil on a medium flame in a wok-style pan.

Add the prawns and stir fry till opaque. Remove from the pan and keep aside.
In the same pan, fry the onions till light brown. Add the tomato and fry till soft.

Now add the spice-vinegar paste, sugar, and salt to taste and fry till the oil begins to separate from the masala.

Add the prawns to this masala and mix well and cook for 2-3 minutes.
Serve with piping hot, plain boiled rice.

here is naga dish

one dog (any k nine will do)
five pieaces of raga miracha (naga chilly)
some water
bamboo shoots
pinch of salt

put all in a big pot and boil until meat is tender.

ready to eat, with some rice

Chicken Cafreal or(galinha cafreal)portuguese dish and famous in Goa.



One chicken broiler approx 1kg 200 gms
Salt to taste
1 sour lime
3 small approx 1” dry red chillies
¼ tsp pepper
12 flakes garlic
100 gms butter
Method
Clean the chicken, and cut into pieces approx 4x4” apply salt and lime juice and keep aside, grind the chillies pepper garlic to a fine paste and apply (inside and outside) to the chicken allow it to marinade for 2 to 3 hrs. Then apply butter to the chicken thoroughly and roast it on live coal holding pieces carefully on a skewer. Keep on applying butter to the chicken pieces now and then till it is well roasted serve with a salad of your choice.

we in goa love our fish and curry brother sorry if its not special to you try some other recipie .
