When the column of pellets travels down the bore, it is found that a slight tapering section at the end of the barrel helps keep the pellets concentrated into a more cohesive group. The amount of spread, or pattern of the pellets at the target can thus be somewhat controlled by this "taper" or choke.

Note that the article discusses this issue in terms of bird shooting. Commonly, shotguns that are intended for slug and buckshot do not use a choke, but have a cylinder bore.
